Lemon Blueberry Bread

This  is a quick bread recipe that is so fresh and wonderful tasting. Everyone will love it for breakfast, lunch or even desert.

Lemon Blueberry Bread

1/2 cup Margarine 3/4 Cup Sugar

3 Tbs Fresh Lemon Juice 2 Eggs

1 1/2 Cup Sifted Flour 1 tsp Baking Powder

1 tsp Salt 1/2 Cup Milk

2 Tbs Grated Lemon Peel 1/2 Cup Chopped Walnuts

1 Cup Blueberries (if frozen, thaw first)

Glaze : 1/2 Cup Lemon Juice and 1/4 Cup Sugar

Directions:

]Grease and flour 9 x 5″ loaf pan. Preheat oven to 350°.

Combine margarine, sugar and juice. Beat in eggs. Sift flour, baking powder and salt. Add flour mixture to egg mixture, alternating with milk and stir just enough to blend. Stir in lemon peel, walnuts, and blueberries. Pour into pan. Bake 1 hour; test for doneness. Bread may need 5-10 minutes more depending on moisture content of blueberries.

While baking, make glaze. Cool bread in pan for 5 minutes. Unmold onto rack. Place rack over plate and spoon glaze over bread. Cool before slicing.
